Ingredients & Notes

Ripe bananas (3 medium, ~300g mashed). The riper, the better — brown-spotted bananas are sweeter and mash more easily. Aim for at least 3 good spots on the skin.
All-purpose flour (1 ¾ cups / 220g). Standard works beautifully here. Want a gluten-free version? Swap 1:1 with a certified GF blend.
Granulated sugar (⅓ cup / 65g). Less than most recipes because the bananas bring plenty of natural sweetness. You can reduce to ¼ cup if your bananas are very ripe.
Eggs (2 large). Room temperature binds the batter smoothly. Let them sit out 15 minutes before you start.
Unsalted butter (⅓ cup / 75g, melted and slightly cooled). Swap for melted coconut oil for a dairy-free version.
Vanilla extract (1 tsp). Real vanilla makes a difference here.
Baking soda (1 tsp). Not baking powder — baking soda reacts with the natural acidity of the bananas for the best rise.
Salt (½ tsp). Balances the chocolate and brings out the banana flavor.
Semi-sweet chocolate chips (¾ cup / 130g + 2 tbsp for topping). Semi-sweet is the move — it balances the natural sweetness of the bananas without tipping into overly rich. How to Make Chocolate Chip Banana Muffins

- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with parchment paper liners. Parchment liners are worth it — the muffins release cleanly every time with zero sticking.
- Mash the bananas in a large mixing bowl until smooth. A few small lumps are totally fine — they add texture. You need about 1 ¼ cups (300g) of mashed banana.
- Mix the wet ingredients. Add the melted butter, sugar, eggs and vanilla to the mashed bananas. Whisk until just combined — about 30 seconds.

- Add the dry ingredients. Sprinkle the flour, baking soda and salt directly into the bowl. Fold gently with a spatula until just combined. Stop as soon as you no longer see dry flour streaks — overmixing makes dense, tough muffins.
- Fold in the chocolate chips. Add ¾ cup of chocolate chips and fold gently — 3 or 4 strokes max. The batter will be thick. That’s correct.
- Fill the muffin cups. Divide the batter evenly between the 12 liners — each cup should be about ¾ full. Scatter the remaining 2 tbsp of chocolate chips over the top of each muffin.
- Bake for 20 to 22 minutes, until the tops are golden and a toothpick inserted in the center comes out with just a few moist crumbs. Start checking at 20 minutes.
- Cool in the tin for 5 minutes, then transfer to a wire rack. Let them rest at least 10 more minutes before eating — the inside finishes setting as they cool.
Golden tops, melty chocolate peeking through — worth every minute of the wait.
Lily’s Tips
Use very ripe bananas — the browner, the better. Brown-spotted bananas contain up to 80% more natural sugar than yellow ones. This is the single biggest difference between a good muffin and a great one.
Don’t overmix. Once the flour goes in, fold gently and stop early. A few flour streaks will finish incorporating on their own. Overmixing develops the gluten and makes your muffins dense instead of tender.
Parchment liners over paper liners. Standard paper liners can stick to moist banana muffins. Parchment releases cleanly every time with zero waste.
Top with extra chips before baking. Those chips on top melt into little golden pools. It takes 10 seconds and makes the muffins look bakery-worthy.
Room temperature eggs. Cold eggs can cause the melted butter to seize and clump in the batter. Let them sit out for 15 minutes before you start.

Variations
Banana oat chocolate chip muffins. Replace ½ cup of flour with rolled oats for a heartier, slightly chewier muffin with more fiber. The oats soak up moisture beautifully and the texture is wonderful.

How to Store
Counter: 3 days — keep in an airtight container at room temperature. The banana keeps them moist longer than most muffins.
Fridge: Up to 5 days in an airtight container. Warm for 15 to 20 seconds in the microwave before eating — they come back to life beautifully.
Freezer: Up to 3 months. Wrap each muffin individually in plastic wrap, then place in a freezer bag. Thaw overnight in the fridge or 30 to 40 seconds in the microwave from frozen.
Meal prep tip: I bake a double batch every Sunday — 24 muffins, two trays, same oven. Half go straight into the freezer. My kids grab one from the fridge every morning before school and I don’t think about breakfast for the entire week.
