It was a Wednesday morning, three bananas way past their prime sitting on the counter, and I had exactly one hour before the school run. I didn’t want something fancy. I wanted something warm, real, and wholesome — something my kids would actually eat.

That’s when this oat flour banana bread became a permanent fixture in our kitchen. It’s gluten-free, nut-free, made in one bowl, and it tastes like the kind of comfort that doesn’t need an occasion.

Ripe bananas. You need 3 very ripe bananas — the kind covered in brown spots. Mash them until you get about 1¼ cups (315g) of smooth purée. The riper they are, the sweeter and more mellow your loaf will be. Trust the process.

Oat flour. Use 1¾ cups of oat flour. The key tip: spoon it into the measuring cup and level it off with a knife — don’t scoop straight from the bag or you’ll pack in too much. You can also make your own by blending rolled oats in a food processor until fine. If you want to go grain-free, this almond flour banana bread is the one for you.

Eggs. 3 large eggs give this loaf its structure. Since we’re using oat flour instead of wheat, the eggs work harder here — don’t skip them.

Coconut sugar. 1 cup of coconut sugar keeps things refined-sugar-free. It has a natural caramel warmth that pairs beautifully with banana. Brown sugar works too if that’s what you have on hand.

Oil. ¼ cup of olive oil keeps the crumb moist and tender. Melted coconut oil or melted butter are both great substitutes — all three work equally well.

Baking powder. 2 teaspoons give the loaf a good lift without yeast or complicated steps.

Cinnamon. 1 teaspoon of ground cinnamon adds that cozy warmth. Don’t skip it.

Vanilla extract. 1 teaspoon. Use real vanilla if you can — it makes a difference.

Salt. ½ teaspoon balances the sweetness and deepens all the other flavours.


How to Make Oat Flour Banana Bread

1. Preheat your oven to 350°F (175°C). Give it a good 10 minutes to fully heat up before the batter goes in.

2. Mash your bananas on a plate with a fork until smooth. You want very few lumps — the smoother the purée, the more evenly the sweetness distributes through the loaf. Transfer to a large mixing bowl.

3. Add everything else directly to the same bowl: the oat flour, 3 eggs, coconut sugar, baking powder, cinnamon, vanilla extract, olive oil, and salt.

4. Mix with a spatula or whisk until the batter is smooth, fluid, and uniform. It will be slightly thicker than a pancake batter but still very pourable. Don’t over-mix — just stir until you see no dry pockets.

5. Prepare your pan. Lightly oil a 9×5 inch (23×13 cm) loaf pan, then line the bottom with a strip of parchment paper. This makes unmoulding effortless — no sticking, no crumbling.

6. Pour the batter into the prepared pan and smooth the top gently with your spatula.

7. Bake at 350°F (175°C) for 45 minutes. The loaf is ready when it has risen, the top is golden and beginning to crack slightly down the centre. A toothpick inserted in the middle should come out with just a few moist crumbs — not wet batter.

8. Cool completely in the pan before slicing. This step is non-negotiable. The crumb finishes setting as it cools — cut too early and you’ll get a gummy centre. Give it at least 30 minutes. It’s worth every second.

Lily’s Tips

Use the ripest bananas you can find. “The riper your bananas, the less sugar you’ll need — nature does the sweetening for you.” Wait until the skin is almost entirely spotted. If yours aren’t ripe yet, pop them (unpeeled) in a 300°F (150°C) oven for 15 minutes.

Measure your oat flour carefully. Spoon it into the cup and level — never scoop. Packed oat flour makes a dense, dry loaf. This is the single most common mistake with this banana bread using oat flour.

Don’t open the oven door before 40 minutes. Oat flour loaves are more fragile during baking than wheat flour ones. Peeking too early can cause the centre to sink.

Let it cool. Really. “The banana bread is not done baking when it comes out of the oven — it finishes as it cools.” I know it smells incredible. Give it 30 minutes minimum.

Brown-spotted bananas contain up to 80% more natural sugar than yellow ones. That’s why overripe bananas make such a difference — they’re doing the work of half the added sugar in this recipe.


Variations

Chocolate chip oat flour banana bread. Fold ½ cup of dark chocolate chips into the batter right before pouring. This is one of my kids’ most requested versions — the chips melt into soft pockets of chocolate through the crumb. Vegan version. Replace the 3 eggs with 3 flax eggs (1 tbsp ground flaxseed + 3 tbsp water each, rested for 5 minutes). The texture is slightly denser but still wonderfully moist and tender.

Banana bread muffins. Same batter, poured into a muffin tin. Bake at 350°F (175°C) for 20-22 minutes. Perfect for lunchboxes. Our banana bread muffins have all the tips for getting that domed top.

Cinnamon spice version. Add ¼ tsp nutmeg and ¼ tsp cardamom to the batter. Warm, cozy, and perfect for autumn mornings.


How to Store

Counter: 2 days — wrap the loaf tightly in beeswax wrap or foil. Oat flour loaves stay moist at room temperature but are best eaten within 48 hours at counter temp.

Fridge: Up to 5 days in an airtight container. Slice before storing for easier grab-and-go mornings. Warm individual slices in the toaster or for 20 seconds in the microwave — it brings back that just-baked softness.

Freezer: Up to 3 months. Slice the loaf completely before freezing and layer slices with parchment between them. Store in a zip-lock bag. Thaw overnight in the fridge or toast straight from frozen for 2-3 minutes.

Meal prep tip: I bake this on Sunday, slice it, and freeze half immediately. That way there’s always a slice ready for busy mornings — no thawing, no effort.

  • 1 cup 160g coconut sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt

Instructions 

  1. Preheat the oven to 350°F (175°C).
  2. Mash the bananas on a plate with a fork until smooth, then transfer them to a large mixing bowl.
  3. Add the oat flour, eggs, coconut sugar, baking powder, cinnamon, vanilla extract, olive oil, and salt to the bowl.
  4. Mix with a spatula or whisk until the batter is smooth and uniform. Do not overmix.
  5. Lightly oil a 9×5-inch loaf pan and line the bottom with parchment paper.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 45 minutes, until the loaf is golden on top and a toothpick inserted into the center comes out with a few moist crumbs.
