Banana Bread Baked Oatmeal
AuthorAuthor: Lily Mellow
This banana bread baked oatmeal is my go-to on rushed mornings — one mug, six ingredients, ready in 90 seconds. Ripe banana and peanut butter make it naturally sweet and comforting, with that soft, tender texture you'd expect from a slice of warm banana bread. No oven, no cleanup, no excuses.

WET INGREDIENTS
- ¼ ripe banana 25g, well mashed
- 1 tbsp 16g natural peanut butter, warmed for 10 seconds
- 1 tbsp 20g maple syrup (or honey)
- 2 –3 tbsp 30–45ml milk of choice
DRY INGREDIENTS
- 3 –4 tbsp 24–32g oat flour, very finely milled
- ¼ tsp baking powder
- ¼ tsp cinnamon optional
- ¼ tsp vanilla extract optional
MIX-INS / TOPPINGS
- 1 tbsp chocolate chips optional
- 1 tbsp chopped walnuts optional
- Drizzle of peanut butter to serve optional
Mash the ripe banana in a small bowl until smooth and paste-like.
Add the warmed peanut butter, maple syrup, and milk. Mix well until fully combined.
Stir in the oat flour, baking powder, cinnamon, and vanilla. Mix until no dry flour remains.
Fold in the chocolate chips or walnuts, if using.
Pour the batter into a microwave-safe mug (minimum 300ml).
Microwave on high for 1–1½ minutes. Check at 1 minute; the center should look just set.
Let rest for 60 seconds before eating. Top with a drizzle of peanut butter and extra chocolate chips, if desired.
Note 1 — Storage: Best eaten fresh. Refrigerate up to 2 days covered. Reheat 30–40 seconds with a splash of milk. Pre-mix the dry ingredients in a jar for a fast weekday setup.
Note 2 — Substitutions: Swap peanut butter for sunflower seed butter (nut-free). Use any milk. Honey works in place of maple syrup. If your banana is very ripe, reduce maple syrup to ½ tbsp.
Note 3 — Oat flour tip: Blend rolled oats 15 seconds in a high-speed blender. The finer the flour, the softer the texture. Coarse oat flour = grainy result.
