WET INGREDIENTS
- 2 medium ripe bananas 200g, peeled
- 2 large eggs
MIX-INS
- 2 scoops protein powder 60g — plant-based or whey, vanilla or unflavored
Mash the ripe bananas in a bowl with a fork until mostly smooth.
Add the eggs and protein powder. Whisk until smooth and fully combined, about 1 minute.
Heat a nonstick skillet over medium heat (350°F / 175°C).
Pour the batter as 1 large pancake or 3–4 smaller pancakes.
Cook for about 5 minutes per side, until golden and cooked through. Flip carefully.
Serve warm with maple syrup, peanut butter, or your favorite topping.
Note 1 — Storage
Fridge up to 3 days · Freezer up to 2 months (single layer, parchment between) · Reheat in toaster or skillet.
Note 2 — Substitution
No protein powder? Use our 3-ingredient banana pancakes as your base instead.
Note 3 — Tip
Mini pancakes (3–4) are much easier to flip than one large pancake with this flour-free batter.
