WET INGREDIENTS
- 2 large ripe bananas 240g / 1 cup mashed
- 3/4 cup 170g plain Greek yogurt
- 2 large eggs
- 1/4 cup 55g packed light brown sugar
- 3 tablespoons 40ml neutral oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
DRY INGREDIENTS
- 1/2 cups 190g all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Mash the ripe bananas in a large bowl until smooth.
Add the Greek yogurt, brown sugar, oil, vanilla, and cinnamon. Whisk until combined.
Add the eggs and whisk again until smooth.
In a separate bowl, combine the flour, baking powder, baking soda, and salt.
Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
Preheat the waffle maker until ready and lightly grease the plates.
Pour about 3 tablespoons of batter per mini waffle or ½ cup for a standard waffle. Close the lid.
Cook for 1–2 minutes at 375°F (190°C) for mini waffles, or 3–4 minutes for standard waffles, until deep golden and easily released.
Repeat with the remaining batter.
Keep cooked waffles warm at 200°F (95°C) on a wire rack.
Note 1 — Storage & Meal Prep: Fridge: up to 4 days in an airtight container. Freezer: up to 3 months — freeze flat, then bag. Reheat in toaster for 1–2 minutes from frozen.
Note 2 — Substitutions: Greek yogurt → buttermilk or plain yogurt (1:1). All-purpose flour → 1:1 GF flour blend for gluten-free. Brown sugar → coconut sugar or maple syrup (same quantity). Oil → melted butter (same quantity).
Note 3 — Tested equipment: Dash Mini Waffle Maker gives the best crisp exterior with this batter. Standard Belgian waffle makers also work — increase cook time to 4–5 minutes.
