Banana Bread Recipe — Soft, Warm & Naturally Sweet with Sour Cream and Walnuts

It was a Sunday morning. Three bananas on the counter, way too far gone to eat. My youngest was still asleep and I had exactly one hour before the chaos started. I grabbed a bowl, melted some butter, and made this.

That loaf didn’t last until noon.

This banana bread recipe uses sour cream and walnuts — and if you’ve never tried it that way, it changes everything. The crumb is tender, the crust is golden, and the whole kitchen smells like something your grandmother would have made. Two ripe bananas, one bowl, no mixer needed.

Everything you need for the best banana bread you’ll ever make — ripe bananas, sour cream, walnuts, and a few pantry basics.

Ripe bananas (2 large, very ripe). The riper, the better — look for yellow-gold skins with brown spots. They mash easier and bring all the natural sweetness. If yours aren’t quite there, pop them in a 300°F (150°C) oven for 15 minutes unpeeled.

Unsalted butter (1/2 cup / 115g), melted. Melted butter — not softened — gives this loaf its dense, tender crumb. Let it cool slightly before adding eggs.

Sugar (1 cup / 200g). White sugar keeps the flavor clean. You can reduce to 3/4 cup if your bananas are very ripe and sweet.

Eggs (2, room temperature). This is important. Cold eggs can seize the melted butter and make the batter uneven. Pull them out 30 minutes before you start. Room-temperature eggs give you a lighter, more airy loaf.

Vanilla extract (1 tsp / 5ml). Pure vanilla, not imitation, makes a real difference here.

Baking soda (1 tsp / 5g). Not baking powder. Baking soda reacts with the acidity in the sour cream and bananas to give the loaf its lift.

Salt (1/4 tsp / 1.5g). Just a quarter teaspoon. The original recipe calls for more — don’t do it. A quarter teaspoon is the sweet spot here.

Sour cream (1/2 cup / 120g). This is what makes this loaf different from every other banana bread you’ve made. It adds moisture and a subtle tang that rounds out the sweetness. No sour cream? Walnuts (1/2 cup / 60g), finely chopped. Finely chopped so they distribute evenly through every slice. Pecans work beautifully too.


How to Make Banana Bread

1. Preheat your oven to 350°F (175°C). Grease a standard 9×5 inch (23×13 cm) loaf pan.

2. Mash the bananas in a small bowl until smooth. A fork works fine — some small lumps are okay. Set aside.

The more you mash the bananas, the more banana flavor you’ll taste in every bite.

3. Whisk the melted butter and sugar together in a large mixing bowl until combined.

4. Add the eggs one at a time, mixing after each addition until the batter is slightly foamy and pale.

5. Stir in the vanilla extract.

6. Combine the flour, baking soda, and salt in a separate bowl and whisk briefly.

7. Pour the wet mixture over the dry ingredients and fold together with a spatula. Mix just until no dry streaks remain — don’t overmix. Overmixing develops gluten and makes the loaf dense and tough.

8. Fold in the mashed bananas, sour cream, and walnuts. Stir gently until just incorporated.

Fold gently — a few strokes is all it takes. The batter should look a little rough, and that’s exactly right.

9. Pour the batter into your prepared loaf pan. Tap the pan lightly on the counter to even out the batter.

10. Bake for 70 minutes. At the 35-minute mark, check the top. If it’s browning too fast, loosely tent a sheet of aluminum foil over the pan and continue baking.

11. Test for doneness by inserting a toothpick in the center — it should come out with just a few moist crumbs, not wet batter.

12. Cool in the pan for 10 minutes, then transfer to a wire rack. Let it cool for at least 20 more minutes before slicing.

The loaf continues to set as it cools. Slice too early and it will be gummy in the center.

Lily’s Tips

Use the ripest bananas you can find. Brown-spotted bananas contain up to 80% more natural sugar than yellow ones — they’re what make this loaf naturally sweet without relying entirely on added sugar.

Don’t skip the sour cream. It’s what keeps this loaf moist on day 2 and day 3. Greek yogurt is a 1:1 swap if that’s what you have.

Chop your walnuts finely. Large chunks tend to sink to the bottom. Finely chopped walnuts distribute through every slice.

The foil trick is non-negotiable. At 70 minutes of baking, the top will want to over-brown. Check at 35 minutes and cover if needed. It takes 5 seconds and saves the loaf.

Don’t rush the cooling. “The banana bread is not done baking when it comes out of the oven — it finishes as it cools.” Give it at least 30 minutes total before you slice.


Variations

How to Store

Counter: 3 days — wrapped tightly in plastic wrap or stored in an airtight container at room temperature. The sour cream keeps it moist longer than most banana bread recipes.

Fridge: Up to 6 days in an airtight container. Bring a slice to room temperature before eating, or warm it for 20 seconds in the microwave.

Freezer: Up to 3 months. Slice the loaf before freezing, wrap each slice individually in plastic wrap, and store in a zip-lock bag. Thaw overnight in the fridge or at room temperature for 1–2 hours.

Meal prep tip: I almost always bake two loaves at once and freeze one. The batter doubles perfectly and the second loaf costs almost nothing extra in effort. Pull slices out the night before for an effortless morning.

Wet Ingredients

  • 2 large very ripe bananas mashed (about 1 cup / 230g)
  • 1/2 cup unsalted butter, melted and slightly cooled 115g
  • 1 cup granulated white sugar 200g
  • 2 large eggs room temperature
  • 1 tsp pure vanilla extract 5ml
  • 1/2 cup sour cream (or plain Greek yogurt) 120g

Dry Ingredients

  • 2 cups all-purpose flour, spooned and leveled 240g
  • 1 tsp baking soda 5g
  • 1/4 tsp fine sea salt 1.5g

Mix-ins

  • 1/2 cup walnuts, finely chopped 60g

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mash the bananas until smooth and set aside.
  3. Whisk the melted butter and sugar together in a large bowl until combined.
  4. Add the eggs one at a time, whisking well after each addition until the mixture is slightly foamy.
  5. Stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Add the wet ingredients to the dry ingredients and gently fold with a spatula until just combined. Do not overmix.
  8. Fold in the mashed bananas, sour cream, and chopped walnuts until evenly distributed.
  9. Pour the batter into the prepared loaf pan and gently tap the pan on the counter to level the batter.
  10. Bake for 70 minutes. If the top browns too quickly, loosely cover with aluminum foil after about 35 minutes.
