Banana Blueberry Muffin Recipe — Soft, Golden & Naturally Sweet

You know that moment when your bananas have gone a little too far? Don’t throw them out. This banana blueberry muffin recipe is the one I reach for on a rushed morning — three ripe bananas, a handful of blueberries, a little cinnamon, and one bowl.

A fresh batch, still warm from the oven.

My kids call them “the speckled ones” because of the blueberries bursting through the tops, and honestly, they disappear faster than my classic banana bread ever does.

Why You’ll Love This Recipe

These healthy banana blueberry muffins are the kind of breakfast I can make half-asleep on a school morning. Here’s why they’ve become our weekly regulars.

  • One bowl, no mixer. Everything comes together with a whisk and a fork — the way I like my mornings.
  • Naturally sweet. Three very ripe bananas do most of the sweetening work here.
  • Soft for days. These stay tender on the counter, not dry and crumbly like some blueberry muffins.
  • Kid-approved. My youngest picks out the blueberries first and eats the muffin around them. Still counts.
  • Freezer friendly. Perfect for meal prep — see the storage section below.

Ingredients & Notes

This blueberry banana muffins recipe uses simple pantry staples and three very ripe bananas. A few small notes on each ingredient will help you get soft, golden muffins every time.

Everything you need — one bowl, no mixer.

Bananas. Three very ripe bananas, the browner the better — they’re what makes these muffins naturally sweet and soft. If you only have two, add a splash of milk to keep the batter moist.

All-purpose flour. 200g gives these muffins their structure. For a gluten-free version, try our oat flour banana bread as a base swap guide.

Sugar. 150g granulated sugar, balanced by the ripe bananas so it never tastes too sweet.

Butter. Melted and cooled to room temperature — this keeps the batter from cooking the eggs too early.

Eggs. Two large eggs bind everything together.

Cinnamon. Just a teaspoon, but it’s what makes the kitchen smell like a bakery.

Blueberries. Fresh, tossed in gently at the end so they don’t bleed through the whole batter.

Craving something without the fruit? Our chocolate chip banana muffins use the same one-bowl method with a chocolate twist.

How to Make Banana Blueberry Muffins

One bowl for the dry, one for the wet, and about ten minutes of hands-on time. Follow these steps and you’ll have a warm batch in under 35 minutes.

  1. Preheat your oven to 356°F (180°C) and line a 12-cup muffin tin with paper liners.

  1. Pour the wet mixture over the dry ingredients and stir just until combined — a few lumps are fine.
  2. Fold in the blueberries gently, so they don’t streak the batter blue.
  3. Fill each muffin liner about two-thirds full, then tap the tin lightly on the counter to release air bubbles.

Lily’s Tips

I’ve tested this banana blueberry muffins recipe a few times in our kitchen. These are the small things that make the biggest difference.

The blueberries burst right where you want them.
  • Don’t skip the cooled butter. Adding warm melted butter straight to the eggs can accidentally scramble them — let it sit a few minutes first.
  • Toss the blueberries in a little flour before folding them in. It keeps them from sinking to the bottom.
  • Barely mix the batter. The second the dry and wet ingredients meet, stop stirring as soon as you don’t see flour streaks — overmixing makes muffins dense instead of soft.
  • One ripe banana contains about 12g of natural sugar and 3g of fiber — which is exactly why these muffins never need extra sweetening.
  • “I always say: the blacker the banana, the better the bread.” — same rule applies here.

Variations

Once you’ve made the classic, it’s easy to switch things up depending on your mood. Here are a few cozy ways to change it.

Want more protein in your morning muffin? Our high protein banana muffins use a similar one-bowl method with a protein-forward twist.

Prefer your blueberries in pancake form instead? Try our banana blueberry pancakes — same flavor combo, weekend format.

For a nut-free almond flour take on banana baking, our almond flour banana bread is worth a look too.

How to Store

These muffins are made for meal prep. Here’s exactly how I keep them soft on the counter, in the fridge and in the freezer.

Counter: 2 days — the blueberries add moisture, so they don’t keep as long unrefrigerated as plain banana muffins.

Fridge: Up to 5 days in an airtight container. Warm for 10 seconds in the microwave before eating.

Freezer: Up to 3 months. Freeze in a single layer first, then transfer to a freezer bag. Thaw at room temperature or warm straight from frozen in a 300°F (150°C) oven for 10 minutes.

Meal prep tip: I bake a double batch on Sunday and freeze half — my kids grab one straight from the freezer bag on rushed mornings.
