WET INGREDIENTS
- 3 ripe bananas about 300g total — 1 mashed, 2 sliced
- 1½ cups 360ml milk of choice (oat, almond, or whole)
- ⅓ cup 80ml egg whites (about 5 egg whites) OR 2 large eggs
- 1 tsp vanilla extract
- Coconut oil or butter for greasing
DRY INGREDIENTS
- 2 cups 180g old-fashioned rolled oats
- 1 tsp ground cinnamon
- 1 tsp baking powder
- ¼ tsp sea salt
OPTIONAL MIX-INS
- Handful of crushed walnuts or pecans optional
- ¼ cup 45g chocolate chips (optional)
Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish.
Line the bottom of the dish with rounds from 1 sliced banana.
Combine the oats, cinnamon, baking powder, and salt in a large bowl.
Mash 1 ripe banana in a separate bowl. Add the milk, egg whites, and vanilla. Whisk to combine.
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until fully combined.
Transfer the mixture to the baking dish and smooth the surface.
Top with rounds from the remaining sliced banana.
Bake for 40–45 minutes, until golden on top and set in the center.
Let cool for 5–10 minutes before slicing into 4–6 portions.
Note 1 — Storage & Meal Prep:
Keeps up to 5 days in the fridge. Freeze individual slices up to 3 months.
Reheat in microwave 60–90 seconds with a splash of milk. Perfect for weekly meal prep.
Note 2 — Egg Substitution:
Replace eggs with 2 tbsp ground flaxseed + 6 tbsp water (rest 5 min) for a vegan version.
Texture will be slightly denser but equally delicious.
Note 3 — Banana Ripeness:
The riper the banana, the sweeter the result. If yours aren't ripe enough,
bake unpeeled at 300°F (150°C) for 15 minutes before using.
