Banana Baked Oatmeal — Golden, Soft & Naturally Sweet

It was a Sunday. Three ripe bananas on the counter, a full week ahead, and I needed something warm, real, and ready to go every morning. That’s exactly how this banana baked oatmeal was born — and ever since then, it hasn’t left our kitchen.

This banana baked oatmeal comes out golden and crispy on top, creamy in the center — no added sugar, ready in 45 minutes.

Crispy on top, creamy and tender in the center, no added sugar. It tastes like banana bread baked oatmeal — but it’s breakfast, and it’s done in one pan.

Why You’ll Love This Banana Baked Oatmeal

This one checks every box for a real weekday morning — here’s why it keeps coming back to our table.

  • No added sugar. The bananas do all the sweetening — the riper, the better.
  • Meal prep made effortless. Bake once on Sunday, eat a warm wholesome breakfast every morning for 5 days.
  • One bowl, one pan. No mixer, no fuss. Real food that fits into a real morning.
  • Crispy outside, creamy inside. That contrast is what makes this so comforting — it eats like a cross between banana bread and porridge.
  • Kid-approved. My kids ask for it with a drizzle of peanut butter. They have no idea it’s healthy.

What You’ll Need

Here’s everything that goes into this banana baked oatmeal — simple pantry staples, nothing fancy. A few notes on the key ingredients so you get the best result every time.

The Moist Ingredients

3 ripe bananas. The star of the show — and the only sweetener. Use bananas with lots of brown spots for maximum natural sweetness. 1 banana is mashed into the batter; 2 are sliced for layering inside and on top. The riper, the better.

1½ cups (360ml) milk. Any milk works here — oat milk, almond milk, or whole milk. I usually go with oat milk to keep it dairy-free. It’s the same base we use in our no-cook banana overnight oats.

⅓ cup (80ml) egg whites (about 5 egg whites) or 2 large eggs. Egg whites give more protein and a lighter texture. Whole eggs give a richer, denser result. Both work — choose what you have.

1 tsp vanilla extract. Don’t skip it. It deepens the banana flavor and gives that warm, bakery-style aroma.

Coconut oil or butter (for greasing the pan). Just enough to coat the dish — this is what gives you those crispy golden edges.

Dry Base Ingredients

2 cups (180g) rolled oats. Use old-fashioned rolled oats, not quick oats. Quick oats turn mushy in the oven. Certified gluten-free oats if needed.

1 tsp cinnamon. Warm, cozy, essential. It ties everything together.

1 tsp baking powder. This gives the bake its lift — don’t leave it out.

¼ tsp sea salt. Just a pinch, but it makes the banana flavor pop.

Optional Add-ins

A handful of crushed walnuts or pecans. Fold into the batter for crunch.

Chocolate chips. A small handful stirred in makes this feel like dessert for breakfast — and my kids go absolutely wild for it.

How to Make Banana Baked Oatmeal

Nine steps, one bowl, one pan. Here’s exactly how I make this every Sunday — the order matters, especially the banana layering trick.

1. Preheat & prep your pan. Heat your oven to 375°F (190°C). Grease a 9-inch (23cm) square or round baking dish generously with coconut oil or butter. Slice one banana into rounds and lay them across the bottom of the dish in a single layer.

Lay your banana rounds across the greased dish — they’ll caramelize from underneath as the oatmeal bakes, creating a soft jammy layer in every slice.

2. Mix the dry ingredients. In a large bowl, combine the rolled oats, cinnamon, baking powder, and sea salt. Stir until evenly mixed.

3. Mix the wet ingredients. In a separate bowl, mash 1 very ripe banana with a fork until smooth. Add the milk, egg whites (or eggs), and vanilla extract. Whisk until fully combined and no lumps remain.

4. Combine. Pour the wet mixture over the dry ingredients. Stir gently with a spatula until everything is evenly coated. Don’t overmix.

5. Assemble. Pour the oat mixture into the prepared dish, over the banana layer on the bottom. Smooth the surface with your spatula. Slice the remaining banana and arrange the rounds on top.

One mashed banana, oat milk, egg whites, vanilla — whisked together until smooth. This is where the natural sweetness happens.

6. Bake. Place in the oven and bake for 40 to 45 minutes at 375°F (190°C). It’s ready when the top is golden, the edges are lightly crispy, and the center bounces back gently when you press it. No liquid should remain.

7. Cool & slice. Let it rest for 5 to 10 minutes before cutting into 4 to 6 portions. This is important — it firms up as it cools and slices cleanly.

The top layer of banana slices caramelizes in the oven, turning golden and jammy. That’s the moment you’ll want to photograph.

Lily’s Tips for the Best Baked Oatmeal

A few things I’ve learned after making this every single week — these small details make a real difference.

Use the ripest bananas you can find. Brown spots aren’t just okay — they’re the point. If your bananas aren’t ripe enough yet, place them unpeeled in a 300°F (150°C) oven for 15 minutes. They’ll turn black and perfectly sweet.

The banana layering is the secret. Slices on the bottom caramelize against the hot dish. Slices on top turn golden and jammy. Every portion gets that soft, melty pocket of banana — it’s what makes this feel like our cozy banana bread overnight oats in warm baked form.

Don’t cut too soon. Like banana bread, this finishes as it cools. Give it at least 5 minutes before slicing, or it will crumble. 10 minutes is even better.

Egg whites vs whole eggs. Egg whites keep it lighter and higher in protein. Whole eggs make it richer and more custardy. I use egg whites on weekdays, whole eggs on weekends.

“One ripe banana contains about 12g of natural sugar and 3g of fiber — it’s one of the most efficient natural sweeteners in baking.”

“The riper your bananas, the less sugar you’ll need — nature does the sweetening for you.”

Variations

This base recipe is incredibly versatile. Here are my four favorite ways to change it up — each one turns into a completely different morning.

Banana bread baked oatmeal. Add ¼ tsp nutmeg and a handful of crushed walnuts to the batter. The flavor profile shifts to pure banana bread — warm, spiced, deeply comforting. This is the version my kids ask for every single weekend.

Peanut butter banana baked oatmeal. Swirl 2 tbsp of peanut butter into the batter just before baking. Serve with an extra drizzle on top. If you love that combination, you’ll also love our peanut butter banana overnight oats for no-cook mornings.

Chocolate banana baked oatmeal. Fold in ¼ cup of chocolate chips and add 1 tbsp of cacao powder to the dry ingredients. Feels indulgent, is actually wholesome.

Vegan version. Use plant-based milk and replace the eggs with 2 tbsp of ground flaxseed mixed with 6 tbsp of water. Let it sit for 5 minutes before adding. Texture will be slightly denser but just as delicious.

High-protein version. Swap egg whites for ¼ cup of vanilla protein powder + 2 extra tbsp of milk. Adds about 10g of protein per portion.

How to Store

This baked oatmeal was basically made for meal prep — here’s exactly how to keep it fresh all week.

Counter: 1 day — cover the dish tightly with wrap or transfer to an airtight container. The oats absorb moisture overnight so the texture will soften slightly.

Fridge: Up to 5 days in an airtight container. Reheat individual portions in the microwave for 60 to 90 seconds, or in a 325°F (165°C) oven for 8 minutes. Add a small splash of milk before reheating to bring back the creaminess.

Freezer: Up to 3 months. Slice into individual portions, wrap each one tightly in parchment paper, then place in a freezer-safe bag. Thaw overnight in the fridge and reheat in the microwave for 2 minutes or in the oven for 12 minutes at 325°F (165°C).

Meal prep tip: I bake this every Sunday evening. By Monday morning it’s perfectly set, and I have a warm, nourishing healthy banana breakfast ready for the whole week. Cut it into bars the night before — grab, reheat, done. For another great batch-cooking option, try these wholesome banana oat bars — they don’t even need reheating.
