Banana Bread Overnight Oats — Creamy Base, Golden Caramelized Banana Topping

You know that moment when your bananas have gone a little too far? Don’t throw them out. Mash one into a mason jar the night before, and by morning you’ve got something that tastes exactly like banana bread — cold, creamy, and honestly a little cozy.

I started making these on Sunday evenings when I needed breakfasts sorted for the week, and now my kids ask for the jar with “the golden bananas on top” every single time. If you love a classic banana bread but need something you can grab straight from the fridge, this is your recipe.

Banana bread overnight oats fully loaded — golden caramelized bananas, amber maple syrup, crushed pecans. Made the night before, ready in the morning.

The Greek yogurt base gives you about 18g of protein without any powder — just real food. And those caramelized bananas on top? Four minutes in a pan. That’s it.

Why You’ll Love These Banana Bread Overnight Oats

Everything about this recipe is designed for real mornings — not magazine mornings.

  • It tastes like banana bread for breakfast. Mashed ripe banana, cinnamon, and vanilla in every bite — zero baking required.
  • About 18g of protein, naturally. Greek yogurt and chia seeds do the work. No protein powder, no supplements.
  • 5 minutes the night before. The fridge does the rest while you sleep.
  • That hot-cold contrast is everything. Warm caramelized bananas on cold creamy oats — it feels like something you’d order at a café.
  • Meal-prep friendly. Make 3–4 jars on Sunday and breakfast is handled until Thursday.

Ingredients & Notes

This recipe has two parts: a base you make the night before, and a quick caramelized topping you cook in the morning. Both lists are short — the magic is in how they come together.

ingredients for banana bread overnight oats — rolled oats, greek yogurt, banana slices, chia seeds, cinnamon and maple syrup on white marble
Everything you need — rolled oats, Greek yogurt, banana rounds, chia seeds, cinnamon, maple syrup, and oat milk. Simple, wholesome, real.

🥣 The Overnight Oats Base

Ripe banana — ½, mashed. The riper the better. Brown spots mean more natural sweetness and a stronger banana bread flavor. Keep the other half for the caramelized topping. For our everyday banana overnight oats we use a full banana in the base — here, we split it between base and topping for more depth.

Rolled oats — ½ cup (45g). Old-fashioned rolled oats only. Quick oats go mushy overnight. Steel-cut oats stay too firm — don’t use them here.

Greek yogurt — ⅓ cup (80g). This is what makes the base thick, creamy, and protein-rich. Use full-fat for the creamiest result. A thick plant-based yogurt (coconut or soy) works great for a dairy-free version. If you love a protein-forward breakfast, also check out our high protein banana oatmeal — same idea, warm version.

Milk — ½ cup (120ml). Oat milk, almond milk, or whole milk all work. Oat milk gives the most neutral, creamy flavor and leans into the banana bread vibe naturally.

Chia seeds — 1 tsp. They thicken the oats overnight and add omega-3s. Don’t skip them — they’re what gives the base that pudding-like texture by morning.

Ground cinnamon — ½ tsp. Non-negotiable for the banana bread flavor. Go up to ¾ tsp if you love it.

Vanilla extract — ½ tsp. Pure vanilla, not imitation. It makes a real difference here.

Maple syrup — 1 tsp (optional). Only add if your banana isn’t very spotted. A properly ripe banana makes this naturally sweet enough on its own.

🍳 The Caramelized Banana Topping

Banana — ½ to 1, sliced into 1cm rounds. Use a banana that’s ripe but still firm — it needs to hold its shape in the pan. Too soft and it’ll fall apart. This is the other half you saved from the base.

Want a bigger batch to spoon over pancakes or yogurt? Our warm caramelized bananas are the full stovetop recipe.

Butter or coconut oil — 1 tsp (5g). Butter gives a richer caramel flavor. Coconut oil keeps it dairy-free and adds a subtle warmth.

Maple syrup — 1 tsp. Poured directly over the slices in the pan — it combines with the banana’s natural sugars to form a glossy amber syrup. Brown sugar works too.

Ground cinnamon — a pinch. Sprinkled right into the pan — it blooms in the heat and smells incredible.

Crushed pecans or almonds — 1 tbsp (optional). Adds crunch and makes the topping feel more generous. I almost always add them.

How to Make Banana Bread Overnight Oats

Two short steps — one the night before, one in the morning. That’s the whole recipe.

freshly mashed ripe banana in a white ceramic bowl with a fork — first step for banana bread overnight oats
The riper the banana, the sweeter the base. Mash it imperfectly — a few chunks are part of the texture.

Step 1 — The Night Before (2 minutes)

I use wide-mouth glass jars with bamboo lids — the airtight seal keeps the base fresh for up to 4 days.

1. Mash the half banana directly into your mason jar using a fork. Get it as smooth as you can — a few small lumps are totally fine.

2. Add the Greek yogurt, rolled oats, chia seeds, cinnamon, vanilla, and milk directly into the jar.

3. Stir vigorously for about 20 seconds. Make sure the chia seeds are evenly distributed and not clumped at the bottom — this step matters.

4. Seal the jar and place it in the fridge for at least 4 hours, ideally overnight.

Step 2 — Caramelize the Bananas (3–4 minutes)

1. Heat a small pan over medium heat. Add the butter or coconut oil and let it melt — about 30 seconds.

2. Place the banana slices in a single layer. Don’t stack them.

3. Pour the maple syrup and a pinch of cinnamon directly over the slices.

4. Cook for 1 min 30 to 2 minutes per side, without moving them, until a golden amber syrup forms and each slice is deeply golden underneath.

Step 3 — Assemble & Serve

1. Take the cold jar straight out of the fridge.

2. Spoon the hot caramelized banana slices directly on top.

3. Drizzle any remaining caramel syrup from the pan over the jar.

4. Add the crushed pecans or almonds if using. Eat immediately — the contrast between warm topping and cold oats is the whole point.

Lily’s Tips for Banana Bread Overnight Oats

A few things I’ve learned after making this recipe more times than I can count.

  • Use the ripest banana you can find. “The riper your bananas, the less sugar you’ll need — nature does the sweetening for you.” A spotty banana in the base means you can skip the maple syrup entirely.
  • Don’t skip the vigorous stir. Chia seeds sink and clump if you stir gently. Give the jar a real mix — 15 to 20 seconds — and tap it on the counter once before sealing.
  • The hot-cold contrast is the whole experience. Don’t let the caramelized bananas cool down before spooning them on. The temperature difference between the warm topping and cold oats is what makes this feel special.
  • Banana science: Brown-spotted bananas contain up to 80% more natural sugar than yellow ones. That’s why a ripe banana makes the base taste sweet without adding maple syrup — the fruit does the work.
  • Prep the base, not the topping. Make 3–4 jars of the base on Sunday. The caramelized topping takes 4 minutes each morning and is always better fresh.

Variations

The base recipe is a blank canvas. Here are the versions I make most often — and a few that have their own dedicated recipes on the blog.

Make It Chocolatey

Add 1 tsp of unsweetened cocoa powder or a small handful of dark chocolate chips to the base. It turns into a banana bread–chocolate hybrid that my kids go wild for. If you love that direction, our chocolate banana overnight oats are the full version.

Make It Nutty

Add 1 tbsp of peanut butter or almond butter to the base before stirring. It adds richness, extra protein, and a flavor that pairs beautifully with the caramelized topping. This peanut butter banana overnight oats version goes even further with that combination.

Make It Vegan

Swap the Greek yogurt for a thick coconut or soy yogurt, and use coconut oil instead of butter for the topping. The result is just as creamy — sometimes even more so.

Make It Higher Protein

Use a thick skyr instead of standard Greek yogurt, and add 1 tbsp of hemp seeds to the base. You’ll land around 22g of protein without any powder.

Skip the Caramelized Topping

On busy mornings, just top with a few slices of fresh banana and a drizzle of maple syrup. Still delicious — just a different kind of morning. If you want a fully warm version, our warm banana baked oatmeal is a great alternative for weekend mornings.

How to Store Banana Bread Overnight Oats

This recipe was built for meal prep — the base keeps beautifully, the topping is always best fresh.

Counter: Not recommended — the dairy base needs to stay cold.

Fridge: Up to 4 days in a sealed mason jar. The oats continue to absorb liquid over time — if the jar feels too thick on day 3, just add a splash of milk and stir. The texture is actually best on day 2.

Freezer: The oat base freezes well for up to 1 month. Portion into individual jars, leave 2cm of headspace (liquids expand), and thaw overnight in the fridge. Do not freeze with the caramelized topping — always make that fresh.

Meal prep tip: Make 4 jars every Sunday evening — it takes under 10 minutes total. Use airtight glass jars with bamboo lids so the seal stays tight all week (Use airtight, wide-mouth glass jars so the seal stays tight all week.). Stack them in the fridge and grab one each morning. The caramelized banana topping takes 4 minutes fresh — that’s the only thing you cook each day. That contrast between the no-effort base and the 4-minute warm topping is what makes this feel like a real breakfast, not just a jar of cold oats.

A Note from Lily

This one started as a lazy Sunday experiment and became the recipe I make more than anything else on this blog. There’s something about the hot-cold contrast — the warm caramelized bananas hitting cold creamy oats — that feels genuinely special, even on a Tuesday morning before school drop-off.

Make the base tonight. Four minutes tomorrow morning. That’s all this asks of you.

Instructions

The night before:

  1. Mash the half banana in the mason jar using a fork until mostly smooth.
  2. Add the Greek yogurt, rolled oats, chia seeds, cinnamon, vanilla, and milk.
  3. Stir vigorously for 20 seconds until fully combined and the chia seeds are evenly distributed.

  2. Place the banana slices in a single layer in the pan.

  5. Remove the jar from the fridge. Spoon the hot caramelized bananas on top, drizzle with the remaining pan syrup, and add crushed nuts if using. Serve immediately.

Notes

Note 1 — Storage & Meal Prep: The oat base keeps in a sealed airtight jar in the fridge for up to 4 days (I use the EDELHAUS glass mason jars with bamboo lids — linked in equipment). If it thickens too much by day 3, stir in a splash of milk before adding the topping. Always make the caramelized bananas fresh — they take 4 minutes and are infinitely better warm.
Note 2 — Key Substitutions: Greek yogurt → thick coconut or soy yogurt for dairy-free. Butter → coconut oil. Maple syrup → brown sugar or honey. Pecans → any nut you love, or skip entirely.
Note 3 — Banana Ripeness Matters: For the base, the riper the better — very spotted bananas are sweeter and mash more smoothly. For the topping, use a firmer banana so the slices hold their shape in the pan.
