You know that moment when your bananas have gone a little too far and you’re standing in the kitchen wondering what to do with them? That was me last Tuesday, four very ripe bananas on the counter, school drop-off in an hour, and absolutely no plan. I grabbed my mixing bowl and made this banana cake with cream cheese frosting — and by the time I got back home, my kids had already found it.

This is the recipe I make when I need something warm and real. One bowl, simple ingredients, and a silky cream cheese icing that makes the whole thing taste like it took way more effort than it did. If you love our classic everyday banana bread, this is its softer, meltier, celebration-ready cousin.
Why You’ll Love This Recipe
This is the kind of cake that disappears before it even cools completely. Here’s why it works every single time:
- Incredibly moist crumb. The combination of ripe bananas, brown sugar, and real butter gives every slice a tender, melt-in-your-mouth texture that stays soft for days.
- No mixer required for the frosting. The cream cheese icing comes together in minutes — just soft butter, Philadelphia-style cream cheese, vanilla, and powdered sugar. That’s it.
- Sheet cake simple. Baked in a 9×13-inch pan, this banana sheet cake needs zero decorating skills. Swoops and swirls are more than enough.
- Naturally sweet from the bananas. The riper your bananas, the less sugar does the heavy lifting. Nature handles the sweetening for you.
- Freezer-friendly. Make it ahead, freeze it whole or in slices — it comes back perfectly after a night in the fridge.
Ingredients & Notes
Good banana cake starts with the right bananas and honest ingredients. Here’s everything you need and a few notes to make sure it works the first time.

For the Cake
Ripe bananas. You need 4 to 5 very ripe bananas — about 2 cups mashed (450g). The browner the peel, the sweeter and more flavorful your cake. Not ripe enough? Bake them unpeeled at 350°F (175°C) for 10 minutes. They’ll be soft, dark, and perfect. This is the same trick I use for our classic everyday banana bread.
All-purpose flour. 3½ cups (420g). Spoon and level — don’t scoop directly from the bag or you’ll pack too much in.
Unsalted butter, softened. 1 cup (226g / 2 sticks). Room temperature is non-negotiable here. Cold butter won’t cream properly and your cake will be dense.
White sugar + light brown sugar. 1½ cups (300g) white + 1 cup (220g) packed brown sugar. The brown sugar adds a warm, caramel depth that white sugar alone can’t give you.
4 large eggs. Room temperature. Add them one at a time — this keeps the batter from breaking.
Whole milk. ½ cup (120ml), slightly warm. Warm milk blends more easily into the banana mixture.
Lemon juice. 1 tablespoon (15ml). Mixed into the milk and bananas — it brightens the whole flavor.
Baking soda. 1¼ teaspoons. Not baking powder. Baking soda reacts with the natural acidity of the bananas and gives this cake its lift.
Ground cinnamon. 1 teaspoon. It disappears into the background but you’d miss it if it wasn’t there. Warm and cozy without being obvious.
Salt. 1 teaspoon. Always. Salt is what makes sweet things taste more like themselves.
Pure vanilla extract. 1 tablespoon (15ml). Use real vanilla — it’s worth it here.
For the Cream Cheese Frosting
Cream cheese. 1 block (226g / 8oz), softened. Philadelphia-style block cream cheese — not the spreadable kind in tubs. The block version has less water and gives you a thicker, more stable frosting.
Unsalted butter. ½ cup (113g / 1 stick), softened. Same temperature rules as the cake — soft, not melted.
Powdered sugar. 3½ to 4 cups (420g to 480g), sifted. Start with 3½ cups and add more if you want it stiffer or sweeter.
Pure vanilla extract. 2 teaspoons.
Optional Mix-ins
Toasted pecans or chocolate chips. About ¾ cup (80g). Fold them in at the very end before pouring into the pan. For the chocolate version, check out the chocolate banana fudge version.
How to Make Banana Cake with Cream Cheese Frosting
This cake comes together in three simple stages: the banana mixture, the batter, then the frosting. Take your time on the creaming step — it’s what makes the crumb so tender.
Step 1 — Prep Your Pan and Oven
Preheat your oven to 350°F (175°C). Line a 9×13-inch (23×33cm) baking pan with parchment paper, leaving some overhang on the sides so you can lift the cake out cleanly.
Step 2 — Make the Banana Mixture
Mash your bananas in a medium bowl with a fork until mostly smooth — a few small lumps are fine and add texture. Add the lemon juice and warm milk, stir to combine, and set aside.
The bananas should look creamy and almost pourable at this point — that’s what you want.
Step 3 — Whisk the Dry Ingredients
Combine the flour, baking soda, cinnamon, and salt in a separate bowl. Whisk for 30 seconds until everything is evenly distributed. Set aside.
Step 4 — Cream the Butter and Sugars
Beat the softened butter, white sugar, and brown sugar together on medium-high speed for 3 to 4 minutes. Don’t rush this step. The mixture should turn pale, fluffy, and almost mousse-like — that’s the air that makes your cake light.
Add the eggs one at a time on low speed, waiting for each one to fully incorporate before adding the next. Scrape down the sides of the bowl between each egg. Add the vanilla with the last egg.
The batter will look very thick and glossy at this point — exactly right.

Step 5 — Assemble the Batter
Alternate adding the dry ingredients and the banana mixture in three rounds, starting and ending with the flour: flour → banana mixture → flour → banana mixture → flour.
Mix on low speed and stop the moment you no longer see dry streaks. Finish folding gently with a spatula — this is the most important step for a tender crumb. Overmixing develops the gluten and makes your cake tough.
Step 6 — Bake
Pour the batter into your prepared pan and smooth the top with an offset spatula. Bake at 350°F (175°C) for 55 to 60 minutes, until a toothpick inserted in the center comes out clean.
Let the cake cool completely in the pan before frosting — at least 1 hour. A warm cake will melt your frosting straight off the top.
The kitchen will smell like warm cinnamon and caramelized banana. My kids always appear out of nowhere at this point.
Step 7 — Make the Cream Cheese Frosting
Beat the softened cream cheese and butter together on medium speed for 2 full minutes until completely smooth and fluffy. Add the vanilla.
Add the powdered sugar gradually on low speed, about ½ cup at a time. Once it’s all incorporated, increase to medium speed and beat for 1 more minute until light and airy.
Spread the frosting over the completely cooled cake. Use the back of a spoon or a spatula to create loose swirls and swoops. No need to be precise — the more natural it looks, the better.

Lily’s Tips for the Best Banana Cake
A few things I’ve learned after making this more times than I can count:
Trust the bananas. “The riper your bananas, the less sugar you’ll need — nature does the sweetening for you.” Wait for proper brown spots. If you’re in a hurry, bake the unpeeled bananas at 350°F (175°C) for 10 minutes. They come out soft, dark, and perfectly sweet.
Room temperature everything. Cold butter, cold eggs, cold cream cheese — any one of these will throw off the texture. Take everything out of the fridge at least an hour before you start.
Don’t overmix. Stop the mixer the moment the flour disappears. Finish with a spatula. This is the difference between a cloud-soft cake and a dense, gummy one.
Sift your powdered sugar. It takes 30 seconds and gives you a completely lump-free frosting. Worth every second.
Philadelphia for the frosting. Use block-style cream cheese, not spreadable. The tub versions contain more moisture and your frosting will be too soft to hold its shape.
One ripe banana contains about 12g of natural sugar and 3g of fiber — so the riper they are, the more natural sweetness they bring to your bake.
Variations
This banana cake recipe is a great base to play with. Here are the variations I make most often at home:
Banana Sheet Cake (Same Recipe, Different Format)
The 9×13 pan makes this a classic banana sheet cake — no layers, no stress. It’s the format I default to for school events and weeknight baking. Simple, feeds a crowd, zero fuss.
Banana Layer Cake
Divide the batter between two 9-inch round pans and bake for 30-35 minutes instead. Stack with cream cheese frosting between the layers for a proper celebration cake. This is the version I make for birthdays — or try our festive banana birthday cake if you want a fully decorated version.
Chocolate Banana Cake
Swap ½ cup of the flour for Dutch-process cocoa powder and fold in ¾ cup chocolate chips. It becomes something entirely different and completely irresistible. We have a dedicated recipe for the chocolate banana fudge version if you want to go all in.
Banana Cupcakes
Pour the batter into a lined muffin tin (fill ⅔ full) and bake at 350°F (175°C) for 20-22 minutes. Same frosting, same flavor, perfectly portioned. For a slightly different twist, our banana cupcakes with buttercream frosting use a lighter vanilla buttercream instead.
Add-ins
Fold in ¾ cup toasted chopped pecans, walnuts, or chocolate chips just before pouring the batter into the pan. Pecans are my personal favorite — they add crunch and a subtle nuttiness that pairs beautifully with the cinnamon.
How to Store
This banana cake keeps beautifully — which is one more reason to love it.
Counter: 1 day maximum, loosely covered — the cream cheese frosting needs refrigeration after that.
Fridge: Up to 4 days in an airtight container. The cake actually gets more moist and flavorful on day 2 as the crumb settles. Pull individual slices out 20 minutes before eating to take the chill off.
Freezer: Up to 3 months. Freeze either the whole unfrosted cake wrapped tightly in plastic wrap, or individual frosted slices on a parchment-lined tray first, then transfer to a freezer bag. Thaw overnight in the fridge.
Meal prep tip: Bake the cake on Sunday, freeze it unfrosted, and pull it out whenever you need it. Make a fresh batch of frosting in 5 minutes — it’s always better freshly made anyway.
